food for thought

& for fat loss

this past week has been my 'active rest' week before the start of a new triathlon training program (48 weeks to be ready for a 70.3 yikes!) Needless to say 'active rest' and 'bikini body' don't necessary go hand-in-hand. 

Yes, I'm feeling fat. 

This is why I came up with this glorious lunch!! 


YUM!

This salad is full of HEALTHY fatty acids, that actually help to shrink fat cells-- That sounds promising!! 

What you'll need:
arugula
roasted sunflower seeds
safflower oil
avocado
feta
salt & pepper

Drizzle enough safflower oil to wet the arugula, top with seeds and feta, slice 1/4 of an avocado on top and finish with salt & pepper. 

Avocados are high in fat, yes, but good fats. They are also high in calories (about 80 calories on this salad) but they have a lot of fiber, so are filling. Sunflower seeds and safflower oil have lots of fatty acids, which trick the body into shrinking fat cells (yay!!) And the feta is just tasty, I mean, no one wants to eat salad if it doesn't taste good. This serving is about 250 calories.

  1. Haha there is no way I would only be able to put 1/2 of an avocado on there... I love avocados! This salad looks yummy!

  3. Well, I meant 1/4, but I would definitely be putting the whole darn thing on :) I know, not ideal, but me likey avocados :)
