Peas & Pasta

Peas & Pasta is a very simple dish to make that can feed many. My mom typically makes it with prosciutto and mozzarella, but since I am lacking those ingredients (any money) I made due with what I had. 

Brit's Peas & Pasta



1 can sweet peas
pasta 
garlic
feta
seasoning (thyme, oregano, rosemary)
salt/pepper
olive oil
lemon

Mince garlic and cook in olive oil, add seasonings. Add peas and let cook a little, add more olive oil if needed. Add juice of 1/2 lemon. Cook pasta, I used 1/2 brown rice fusilli and half space needle shaped pasta (because I had half a bag of each and wanted to use them up) Once the pasta is done, mix it all together, add feta and you're done.

Food Cravings

I've only been back in Pullman for a week and a half, but I am already missing some of my summer favorites. 

Thai iced tea and Athenian Chicken Gyros

The thai iced tea is easy. I was smart and stocked up on the instant stuff before I came back to Pullman, but you can probably buy it online at worldmarket.com I brew, add sugar, chill and add lime juice, it's the tastiest, most refreshing thing in the world-- I'm obsessed! 


The chicken gyros are a little bit trickier, but if you're willing to give 'em a try, here is my recipe. 
Boneless/skinless chicken breast
seasonings (dill, thyme, rosemary)
lemon
greek yogurt
hummus
avocado
cucumber
pita
tomato
lettuce
garlic

Rub seasoning, salt/pepper on chicken with some lemon juice and cook in olive oil with minced garlic. Mix together some greek yogurt, seasoning, lemon juice, garlic and chopped cucumber (this is your tzatziki sauce) Slice an avocado, lettuce and tomato. Warm your pita in the microwave or on a hot grill for extra flavor. Spread hummus and tzatziki on pita and assemble your gyro with chicken, avocado, lettuce and tomato. 

I never measure things, I just taste along the way. So if you're used to specific measurements and cook time, I'm sorry for not supplying them, I'm a trial and error kind of girl.

Wedding Wear

There are new happenings in the world of Brit!

First thing: I started my last year of college last week and my classes are going great, so far I have all As on my assignments, let's hope I can keep it that way. A few days ago I did a 6 mile run, which was pretty solid. Yesterday I did a 2 mile swim and 4 mile run, both pretty solid but I'm hurting today! 

Second thing: I have a boyfriend! He's super great. We've known each other for 3 years and always had that super comfortable, poop joke telling sort of friendship. But now that we're together, I can't imagine any guy being more perfect. I'm pretty dang happy.

I will be going to his sister's wedding this Saturday, and after a mild, 30 second freak-out about what I should wear, I decided to do a blog post on what to wear if you are attending a wedding. I am in no way an expert on this, considering I've only been to a few weddings that I can remember, but here are some simple rules to follow when deciding what to wear to a wedding.

Be Appropriate
I don't care if you're a single girl trying to snatch a groomsman, your skirt/dress should be no shorter than two inches above the knee, should be fitted but not tight, and your shoulders should be covered. 

Don't Draw Attention to Yourself
Do a fun color, but not a crazy pattern. If you wear something that is too loud, that might take attention away from the purpose of the event. Don't be THAT girl.

Don't Wear White, Black or Red
The bride wears white, black is for a funeral and red is just too sexy for a family event.

This is the dress I will be wearing, yes I have already worn it to a wedding, but in this case I am ok with recycling outfits. Besides, it's my favorite dress ever and I never get to wear it!

all day dessert

This energy smoothie tastes like dessert! And since it's so filling, just one serving can get you through the entire day!! 


1/2 frozen Peach


1 tablespoon Almond Butter


6 large Blackberries


Almond/Coconut milk blend (as much as you'd like, depending on how thick you like it)


Blend! Blend! Blend!

Add some Agave Nectar if it's not sweet enough ; )

this past week has been my 'active rest' week before the start of a new triathlon training program (48 weeks to be ready for a 70.3 yikes!) Needless to say 'active rest' and 'bikini body' don't necessary go hand-in-hand. 

Yes, I'm feeling fat. 

This is why I came up with this glorious lunch!! 


YUM!

This salad is full of HEALTHY fatty acids, that actually help to shrink fat cells-- That sounds promising!! 

What you'll need:
arugula
roasted sunflower seeds
safflower oil
avocado
feta
salt & pepper

Drizzle enough safflower oil to wet the arugula, top with seeds and feta, slice 1/4 of an avocado on top and finish with salt & pepper. 

Avocados are high in fat, yes, but good fats. They are also high in calories (about 80 calories on this salad) but they have a lot of fiber, so are filling. Sunflower seeds and safflower oil have lots of fatty acids, which trick the body into shrinking fat cells (yay!!) And the feta is just tasty, I mean, no one wants to eat salad if it doesn't taste good. This serving is about 250 calories. 



belts with dresses: summer

Hello friends!!
It's been a while but I'm back! Let's get down to business. I had a reader ask about wearing belts with summer dresses so here is the post in reply! 

Mix & Match

This is where the age old tradition of 'matching your belt with your shoes' can come into play. Pair these with a basic black dress or basically any other color. As long as the accessories are intriguing, the rest of the outfit should be a canvas. 

Color Blocking

This concept is pretty basic: pick a solid colored dress and add a thick belt of a different color and chunky shoes. This is where you can be creative; tan&neon, black&white, green&pink. The possibilities are endless! 

Texture & Structure

Or lack of structure I should say. Here I paired a flowy printed dress with a woven belt. Since this belt is too big for me I tied it. Add some neutral shoes. 

The best stores to find both solid/printed/structured/flowy dresses is Forever21 and H&M. Both places are also great for cheap belts. Basically, none of these outfits cost more than $30
