A different kind of Turkey Day

In the mood for a healthy & filling meal?

Turkey is your new best friend. 

I had a strike of inspiration and happened the have the right ingredients to create something super tasty! 

Turkey Meatballs and Veggies


What you'll need:
  • 1 pound ground turkey 93/7
  • 1 can stewed tomatoes
  • spinach
  • salt/pepper
  • 1 clove garlic
  • 1/2 cup red onion
  • olive oil
  • cumin
  • coriander
  • 1 egg
  • teriyaki sauce 
Chop the onion and garlic and throw them in a sauce pan with some olive oil. Add the can of stewed tomatoes, spinach, salt and pepper. The spinach should wilt. Keep this on medium low heat. 
Heat your oven to 325. 
In a large mixing bowl, break the turkey into pieces and add the egg. Get ready to use your hands!! Work the mixture until the turkey is completely broken down. Add some salt, pepper, coriander, cumin, a few splashes of teriyaki sauce and mix well. 
Heat a pan and add some olive oil. 
Roll the turkey into small balls and cook them in the pan until light brown on all sides and almost completely cooked through. 
When they're done, place them in an oiled baking dish and spoon the tomato mixture over the top. Place in oven and bake for about 10 minutes. 
This is a well balanced meal, super filling, you'll have tons of leftovers and it's guilt-free!!
